The Challenge

The client sought to bring the atmosphere, look and feel of the premium Argentine steakhouse brand of Gaucho to Newcastle - transforming a former banking premises into a high-end restaurant and bar. The building, a former finance-related site on Market Street / Pilgrim Street, required a complete strip-out and full refurbishment to meet the brand’s aesthetic and functional standards. The task included everything from structural re-work and M&E installation to bespoke interiors, soft furnishings, kitchen, sanitary infrastructure, and signage.

The Solution

Hugh Stirling acted as lead contractor and delivered a full, multi-trade fit-out. The scope comprised:


  • Project management of all trades

  • Manufacture and installation of bespoke joinery, including the bar and seating

  • Upholstery and soft furnishings throughout

  • Full mechanical and electrical installation

  • Decoration, flooring, and surface finishes

  • Reinstatement of sanitary systems, toilets and washrooms

  • Full kitchen fit-out including all needed equipment

  • External signage and venue dressing to meet brand identity


By taking a fully integrated approach - coordinating joinery, M&E, decoration, and finishes - Hugh Stirling ensured the project adhered to the design brief while delivering on schedule and to high standards of craftsmanship.
