Hugh Stirling has begun 2026 with an exciting line-up of projects in partnership with Mitchells & Butlers PLC, centred on some of Scotland’s most cherished hospitality buildings. These works reflect our ongoing commitment to craftsmanship, heritage-respectful delivery and refurbishment excellence across a range of historic venues.

Bringing Heritage Buildings Back to Life with Professional Fit-outs

We are proud to be working with Mitchells & Butlers on a series of upcoming refurbishments and fit-outs that celebrate the history and architectural legacy of each location while adapting the spaces for contemporary hospitality use. These include:

• Greyfriars Bobby’s Bar, Edinburgh – A landmark pub on Edinburgh's Candlemaker Row with deep roots in the Old Town’s culture and story.

• Balloch House, Loch Lomond – A remarkable country pub dating back to the early 18th century, once a key ferry-side hotel and host to several notable historical visitors.

• Browns Brasserie & Bar, Glasgow – Located within the former General Post Office building on George Square, this project builds on Glasgow’s rich architectural heritage.
